The taste system that is one of the fundamental functions for life is responsible for selecting and discriminating
food. In particular, gustatory cortex plays an important role in processing taste information produced by various tastants. So far,
many studies have discovered considerable mechanisms that process the taste information at the level of receptors and
subcortical area. Until now, there are sparse studies about information processing of taste in the gustatory cortex, but the study
of a gustatory processing in the cerebral cortex is increasing, along with the advent of exquisite neuroimaging techniques and
optical tools. These techniques will shed light on taste processing that includes cognitive, emotional, and behavioral aspects
